Strawberry Zebra Cheesecake

• 1 lb strawberries, cleaned and hulled

Chop up and put into food processor and process until all chunks are gone.  Strain into  a bowl to remove any little chunks and most seeds.  Set aside.

Crust:

• 1-1/2 cups graham cracker crumbs
• 1/4 tsp cinnamon
• 1/3 cup melted butter

Mix altogether well and press into the bottom of a 9″ springform pan.  Wrap the springform pan with plastic wrap so that it covers the bottom and the sides – not covering the top – press it on well.  Put the crust into the freezer while you make the filling.

Apple Custard Tart

In a food processor, put

• 2 cups flour
• 1/2 cup sugar
• grated peel of 1 lemon

Pulse to blend well.

Add 14 tbsps cold butter cut into small cubes

Applesauce Graham Cracker Cake

• 2 cups sugar
• 4 tbsps flour
• 2 tsp baking powder

Put all in a large bowl and whisk well to combine.

• 3/4 cup milk
• 1/2 cup sugar
• 2 tsps salt
• 1/2 cup butter
• 4-1/2 tsp dry yeast
• 2 beaten eggs
• 4-1/2 cups flour

Heat milk until it begins to steam and bubble a bit on the sides.  Add sugar, salt and butter and mix until sugar is dissolved and butter is melted.  Pour into a small bowl and cool to room temp.

Cinnamon Bun Coffee Cake

• 2-1/4 tsp dry yeast
• 1/3 cup sugar
• 2/3 cup warm milk
• 3-1/2 cups flour
• 1/2 cup melted shortening
• 3 eggs
• 1 tsp salt
• 2 tbsps good shortening
• 1/2 cup brown sugar
• 1-2 tsp cinnamon
• chopped pecans for filling – optional

Dissolve yeast and sugar in milk in mixing bow.  Add 1 cup flour and beat until smooth.

Raspberry Swirl Brioche

• 3-1/2 cups flour
• 1/4 cup sugar
• 2 tsps active dry yeast
• 2 tsp salt
• 4 large eggs
• 1/3 cup warm whole milk
• 3/4 cup soft butter
• zest of 1 lemon

In a mixer bowl, combine flour, sugar, yeast and salt.  Stir in eggs on low speed. Keeping mixer on low, add milk and beat until combined.  Turn mixer up a bit and beat for 6-8 minutes.
