Mix together:
- 1 cup flour
- 1-1/4 cups graham cracker crumbs
- 1-1/2 tsp baking powder
- 1/4 cinnamon
In a mixer bowl, beat:
- 1 stick (4 oz) soft butter
- 1/2 cup brown sugar
- 1 egg white – save the yolk for the filling
- 1/2 tsp vanilla
Mix well together – if the mixer seems a bit dry, add a few drops of water until it forms a dough
Make balls of dough and make a well in each ball.
In a mixer bowl, beat:
- 3 oz. soft cream cheese
- 1 egg yolk
- 1/4 cup sugar
- 1/4 tsp vanilla
(Note – you can add a bit of lemon zest at this point if you wish)
Beat all till well blended and then fill the cookie wells with the filling.
Bake at 350 degrees for about 12 minutes.
When cool, you can leave as is, dust with confectioners sugar, or put a small dollop of raspberry jam on center of each cookie and top with a fresh raspberry and then sprinkle with confectioners sugar.
