Szarlotka (Polish Apple Pie)

In a food processor, put

  • 2-1/2 cups flour
  • 1/2 cup sugar
  • pinch salt

Pulse a few times to blend and then add:

  • 8 ox cold cubed butter
  • 4 egg yolks
  • 2-3 tbsps ice water

Blend until almost coming together – remove and knead a bit on a counter.

Remove 1/4 of the dough, wrap and freeze

Place a piece of parchment paper on bottom of springform pan.

Roll 1/2 dough into a circle and place in bottom of plan.

Divide rest of dough in 4 pieces, roll each piece either into a log and press into 1/4 of the sides of the pan and finish with the other 3 pieces – or – roll each piece out and press each piece into 1/4 of the sides of the pan.

Wrap and freeze for 15 minutes or so.

Filling:

  • 5-6 medium apples (I used Gala) – about 2-1/2  lbs. – peeled, cored and cut into cubest

Put in a pan and add:

  • 1/2 cup cinnamon sugar (1/4 cup white sugar, 1/4 cup brown sugar, 2 tbsps cinnamon mixed well)
  • 1 tsp lemon juice
  • 1 tbsp dark rum – optional
  • 1/4 cup water
  • 1/4 corn starch

Cook until soft  but not mushy

Remove and add 1 tsp vanilla

Pour filling into shell

Remove the saved piece of dough from freezer and grate over the top of the pie

Sprinkle with more cinnamon sugar

Bake at 350 for about 45-50 minutes

When cool, dust generously with confectioners sugar.
