Christmas Cranberry Cookies

• 2-1/2 cup flour
• 1 tsp baking powder
• 1 tsp baking soda
• 1/2 tsp salt
• 1/2 soft butter
• 1/2 cup good quality shortening
• 3/4 cup white sugar
• 3/4 cup brown sugar
• 2 tsp vanilla
• 2 eggs
• 2 cups good quality white chocolate chips
• 1 cup cried cranberries
• 1 cup chopped pecans

Mix the flour, baking powder, baking soda and salt.

Cream the butter and shortening well and then add the white and brown sugars and blend well. Add the eggs and then the vanilla and beat until a smooth dough. Add the chips, cranberries and pecans and mix well.

Using a scoop, drop cookies onto a parchment lined baking sheet at bake at 375 for 10-12 minutes or until lightly browned and set.
