Praline Shortbread

  • 1 tbsp ground coffee
  • 1 tsp boiling water
  • Mix together and set aside for 4 minutes, then drain and discard the grounds.
  • 8 tbsps soft butter
  • 2 tbsp creamy peanut butter
  • 1/2 cup sugar
  • 2/3 cup cornstarch
  • 1-2/3 cup flour
  • 1 tsp vanilla

Mix the flour and cornstarch together.

Cream the butter and peanut butter well. Then add the sugar, vanilla and then the flour and blend well

Line a 9″ square pan with parchment and then spray with cooking spray.

Christmas Cranberry Cookies

  • 2-1/2 cup flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 soft butter
  • 1/2 cup good quality shortening
  • 3/4 cup white sugar
  • 3/4 cup brown sugar
  • 2 tsp vanilla
  • 2 eggs
  • 2 cups good quality white chocolate chips
  • 1 cup cried cranberries
  • 1 cup chopped pecans

Mix the flour, baking powder, baking soda and salt.

White Chocolate Christmas Drops

White Chocolate Christmas Drops

12 oz. (2 cups) chopped white chocolate or bits

1/2 cup dried cranberries

1/2 cup chopped pistachios

1/4 cup candied orange peel – optional

Melt the chocolate over simmering water.  Drop by generous  teaspoonfuls onto a silpat lined or buttered baking sheet.

Immediately put some cranberries, pistachios and peel on top.  Gently pat down to adhere.

Let completely set – can do in the refrigerator or at room temp.

Store in an airtight container at room temp for about 10 days or freeze in a well sealed container up to 2  months.
