In a pot, put
- 1 cup water
- 1 stick butter 1 tsp salt
Bring to a boil
Remove from heat and add 1 cup flour and with a wooden spoon, beat well until all flour is blended in and the mixture does not coat the bottom of the pot
Put mixture into electric mixer bowl and beat on low speed for 2-3 minutes until it cools down a bit.
Slowly add 4 eggs, one at a time and blend well. When all blended, add
- 1/2 cup finely diced ham
- 1/2 cup finely diced gruyere cheese
- 2-3 tbsps finely chopped chives
Mix well and then put mixture into a piping bags.
On parchment lined pans, pipe out small mounds. Brush with egg wash and then grate more cheese on top
Bake at 400 degree for 22-30 minutes or until golden brown
NOTE: To freeze, put the tray with the baked gougeres in the freezer. When frozen solid, remove and pack in freezer bags. Keeps up to 3 months.
To reheat – remove the frozen gougeres and put on a cookie sheet and reheat at 350 for 6-8 minutes
