- 1/4 cup caster (superfine) sugar
- 2-1/4 tsps yeast
- 1 cup warm milk
Mix altogether and let sit for 10-15 minutes.
Sift 3 cups of flour over the yeast mixture and mix well

- 1/4 cup melted butter
- 1/2 tsp salt
- 1/2 tsp vanilla
Mix well – it will be a bit sticky. Knead on mixer 7-8 minutes until a soft but not sticky dough
Put into a greased bowl, cover and let rise 60-90 minutes.
Turn out onto a floured surface, form into a ball and cut into 6 pieces
Form each piece into a ball and roll each one out to a very long oblong, about 17″
Brush with soft butter
Sprinkle with cinnamon sugar
Roll up the dough to make a log. Roll the log to make it even a bit longer.
With a sharp knife cut each log lengthwise into 2 pieces.
Take one piece and curl it into a snail and put into a well-buttered muffin pan
When all rolled, cover and let rise for about 30-40 minutes.
Brush the tops with egg wash (sprinkle more cinnamon sugar on top if you wish) and bake at 350 degrees for 25-30 minutes.
When ready to serve, you can use a corer to make a hole in the center and fill with whatever you like – I like a bit of pastry cream and then a dollop of jam on top.
Put a nice dollop of whipped cream on top and dust heavily with confectioners sugar.
